Explore the beautiful old city of Cádiz in the morning and spend the afternoon relaxing on the beach! Cádiz is an hour and a half drive from Suryalila, which makes it a great day trip. Cádiz is one of the oldest cities in Europe. It was a centre of the Phoenician empire up to 3,000 years ago and then became the 3rd most important city in the Roman Empire. Later it became the city where Columbus left for the Americas and later still was the city where the first liberal constitution in Spain was written in 1812. Cádiz has a unique position, being situated at the end of a narrow peninsula of land, surrounded on all sides by water, leaving it vulnerable to the elements, especially winds and storms in the winter. In the summer, most of the city seems to move to the beautiful beaches that surround the old city and that continue in the newer parts of town. The atmosphere reminds one of a smaller Rio de Janeiro. The old city is unique in its charm, with typical narrow streets opening up to beautiful plazas.

    < Back Suryalila Paella Prep Time: 1 Hour 30 Cook Time: 1 Hour 30 Serves: Serves 4 Level: Intermediate About the Recipe Paella is arguably the most famous dish of Spain and we can understand why! We hope you enjoy this mouthwatering veggie version of traditional Spanish paella. Ingredients Prepare all ingredients and set aside… 3 cups bomba rice (that is traditionally used for Paella) 6 cups good vegetable stock 1/2 teaspoon crushed saffron 1 cup fresh fava beans, peeled, lightly poached in salted water or broth until their skins split 1/2 bunch asparagus, trimmed into 5-6 inch lengths, and lightly coated in olive oil and salt 2 fire-roasted red peppers, one cut into long decorative strips, and 1 diced finely 8-10 wedges of marinated artichoke hearts Preparation Step 1 Marinate the Tofu (optional)… 1 pound of tofu, cut into 1/2 inch pieces 2 T olive oil 1/2 t oregano 1/2 t black pepper 1/2 t salt 3 T smoked paprika (or sweet) Fry tofu in olive oil until slightly brown on some sides, add all seasonings and toast on low heat for a minute or two. Let marinade for up to a day at room temperature if possible. Step 2 Sauté the Oyster Mushrooms… 1 pound oyster mushrooms, torn into pieces 2 T olive oil 1/2 t crushed garlic 1/2 t salt and pepper Sauté oyster mushrooms slowly in a non-stick pan with olive oil, salt, pepper and garlic until browned and flavorful on all sides. If not using tofu, add paprika and oregano to mushrooms instead of tofu. Step 3 Make a Kick-Ass Sofrito… 1 cup onions, diced 2 T olive oil 1/2 cup green peppers, diced 1 T garlic, crushed 1/2 cup roasted red peppers, diced 1/4 cup parsley, chopped 2 cups cubed or crushed tomatoes, bottled or fresh 1 t salt 1/2 t pepper Step 4 Add dry bomba rice and stir into sofrito until rice is thoroughly hot and just starting to stick to bottom of pan (about 2 minutes). Add hot saffron broth slowly to paella pan, allowing the broth to completely cover the rice. Add mushrooms and tofu and push them gently into rice and broth, without stirring. Shake pan to even out rice level and make sure the liquid just covers everything, adding more if necessary. Cover paella pan with foil and allow to cook over a medium flame for about 10 minutes. Remove foil and arrange red pepper strips, artichoke hearts, and asparagus spears decoratively on top of rice. Sprinkle fava beans over top, cover again with foil and simmer slowly for another 10 minutes*, or until water is completely absorbed and rice is cooked al dente. Don’t be afraid to add a bit more broth if your paella is starting to get crispy on the bottom but is still not cooked on the top or sides. * If your paella pan is much larger than your burner, place it on 2 lit burners for the last 10 minutes, and rotate every minute, so the sides of the pan also get cooked. Stick a fork into the middle of the pan and try the rice to test if it’s done. The bottom should be sticking to the pan a little, and the top should be al dente, but not actually crunchy. Take off heat, remove foil, and serve with lemon wedges. Buen Provecho! Previous Next

Zahara de la Sierra Winding country roads eventually unfurl to reveal this stunning ‘pueblo blanco’ built into the side of a mountain. As you approach from a distance, the sight is so captivating that you’ll feel like you’ve driven into a fairytale. Laying at the foot of a twinkling emerald-colour lake, and topped with a turreted castle, it’s easy to see why Zahara is known as one of the most beautiful villages in Cadiz province. And, the closer you get, the more stunning it becomes… Pretty white washed houses adorned with colourful flower pots zig zag up the hill like sugar cubes balanced on top of each other. Hidden away toward the top, you’ll find the town’s centre with a stunning piazza and Santa Maria Parish Church. Driving through the narrow streets is restricted, so the best way to reach the centre is by foot. The most scenic route is by climbing the flight of stairs through a beautiful canopy of trees leading to the upper terraces. The walk up is certainly a good work-out, but you’ll be rewarded with magnificent views over the shimmering lake and mountains. If you’re lucky, you may see Birds of Prey gliding in the sky. Within the charming heart of the village, you’ll find tapas bars and restaurants dotted along the leafy streets hanging with lanterns. A further trek up the hill will take you to one of Zahara’s main attractions, the Castillo de Zahara de la Sierra. Dating back to between 13-14th century, the panoramic views from the castle just get better (if that’s possible!). And in the warmer months, you can see canoes and paddle boards gliding across the lake. Trips here from Suryalila often include a stop at one of our favourite eateries, Al Lago. Thanks to the stylish restaurant’s lake-side location, and creative seasonal menu featuring traditional Spanish dishes with a modern flair, a meal here is the perfect way to nourish body and soul. Ingredients 150 grams frozen or mixed berries 80 grams chia seeds 500 ml rice milk 1 tsp vanilla powder Yoghurt ( optional topper ) Granola ( optional topper ) Fresh fruit Preparation Step 1 Whisk together chia seeds, milk and vanilla. Step 2 Stir in fruit. Step 3 Let sit overnight or at least 5 hours until the seeds soak in all the moisture. Serving Suggestion Add to a jar and sprinkle granola, yoghurt and fruit on top! Enjoy! The ‘old’ and ‘new’ town is split by the Tajo Gorge as if by magic and is connected by the Puente Nuevo 'new' bridge. For the thousands of visitors who flock here every year, they make this their first stop - and for good reason. The views are spellbinding. Deep in the chasm of the gorge snakes the Guadalevín river flowing over rocks and boulders making it a popular trail for canyoners. Rock climbers can also be spotted scaling the dizzying heights of the golden gorge walls. Beyond, farmland, olive groves and mountains stretch as far as the eye can see. It’s little wonder that the famous American writers Earnest Hemingway and Orson Welles were inspired to live here. Apart from dramatic views, the town boasts a rich history. The Celts were the first settlers back in 6th Century BC, and over the centuries, Ronda was taken over by the Phoenicians, Romans, Visigoths and Berbers. This diverse cultural tapestry can be explored through Ronda’s beautiful palaces, churches, squares, museums, Arabic baths and monuments peppered around the labyrinth of streets lined with tapas bars, shops and restaurants. The most notorious site is the Plaza de Toros, one of Spain’s oldest bullrings set in a stunning piazza surrounded by gardens leading to the cliff edge. Our favourite way to savour all the delights this wonderful pueblo has to offer is on a walking tour. The day typically starts with a stroll along the bridge before following the winding path into the belly of the gorge to take in the incredible vistas from the bottom up. Along the way, your guide will share stories of Ronda’s fascinating history whilst leading you through the pretty cobbled streets and alleyways. After working up an appetite, you’ll settle at a wonderful Spanish restaurant and sample the area’s gastronomical delights on a sun-dappled terrace.     < Back Mariangeles Sumptuous Chocolate Cake Recipe Prep Time: 20 Minutes Cook Time: 50 minutes Serves: Serves 8 Level: Intermediate About the Recipe Mariangeles top tips for baking “Following a recipe is easy, but cooking with patience and care is essential. Above all, it’s important to keep an eye on the cooking temperature and the timing.” “My advice for vegan and gluten free baking is that firstly you should always use good quality gluten free flour such as (sarraceno), corn or almond. Secondly, you can replace egg with banana, chia (1 spoon of chia seeds mixed with 3 spoons of water), or flax (1 spoon of ground flax seeds with 3 spoons of water). Ingredients 250gr buckwheat flour 85 gr cocao powder 15 gr baking powder 2 tsp bicarbonate soda A pinch of salt 250gr honey 120ml of coconut oil 240ml milk (rice or soya) Vanilla 3 bananas 240ml hot water Preparation Step 1 Mix the bananas, honey, oil, milk and vanilla in a bowl. Step 2 Pass the flour, baking powder, bicarbonate soda, cocoa powder through a sieve into the bowl. Step 3 Mix in the hot water and pour into a 20cm mould. Bake in the oven at 180 degrees celsius for 50 minutes. Step 4 For the frosting; soak the dates in water then later blend together adding water, cocoa powder and vanilla until you reach the desired creamy texture. Smother on the cake and enjoy!
